- 2 cups short-grain brown rice
- 2.5 cups water
- juice from one lime
- 1/4 fresh cilantro leaves, chopped
- 1 tsp salT

gather ingredients:

Start cooking: place rice and water in instant pot and give a stir. Pressure cook on high for 15 minutes. Let the pressure release for another 10 minutes before removing lid. Carefully release steam and Remove lid. stir in remaining ingredients.
Enjoy with vegan sour cream (recipe here) and guacamole (recipe). Or just grab a bowl-full and dig in.
Makes 4 cups.
