
ingredients list:
- 2 cups oat flour (you can make your own with old-fashioned rolled oats using high-powered blender)
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tbsp sugar
- 2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water)
- 1.5 cups non-dairy milk of choice
- Coconut oil for cooking
Gather ingredients:


Start cooking: make flax eggs and set aside. Mix dry ingredients first, the fold in the wet ingredients using a rubber spatula. Heat up the coconut oil in a pan on medium-high heat. Once the oil is hot, add the pancake batter – I like to use a 1/4 measuring cup. Flip once bubbles start to form – but keep an eye on them so they don’t burn.
I like to add blueberries before flipping, and then top with almond butter and maple syrup – but the options are endless! Makes 10.
